possibilities:

Stefan Coram is a member of the secret Camberian Council and has
access to all the learning of Camber and Evaine.

Stefan has had access to a much higher degree of Deryni training than
most of the Deryni characters we know (including making portals on the
fly)

Stefan Coram has some direct connection to Camber and is assisting him
in guiding Kelson et al

Rhydon does not know Arilan is Deryni but Stefan does.  Or that
knowledge is blocked so Rhydon/Stefan knows Arilan but cant remember
why

or the simpler answer that Arilan and Rhydon both being of noble
families have had some social/court interaction.

this has been discussed in the long ago past (of usenet) but I dont
think we ever got a full explanation - i prefer the 3rd possibility
above
